- Oysters on the half shell, baked and raw
- Paired with Elephant Island Pink Elephant
- Course #2 Arugula Salad
- Peppery arugula dressed with olive oil and lemon emulsion, topped with spicy pecans and goat cheese feta
- Paired with Thornhaven Estates Sauv Blanc Chardonnay
- Course #3 Chicken Flutes
- Braised local chicken thighs served in a crispy wonton flute and dressed with a smoked chanterelle vanilla mushroom cream
- Paired with Wild Goose Chardonnay 2011

- Fresh salmon filet grilled and topped with a roasted red pepper coulis, served over charred seasonal vegetables
